Paleo Banana Bread

Even though I've gotten a little lax on The GAPS diet, I am still completely grain free. This means that store bought bread, even gluten free, is not an option. I've experimented with making bread before with nut and coconut flour, but when I saw this recipe for paleo banana bread on Healthy Holistic Healing I knew I had to try it. The best part is there is NO added sugar. The bananas add just the right amount of sweetness to the recipe. I like to make a big batch and eat it in the morning for breakfast. I'm usually on the go, so I can just grab it on my way out the door and eat it on the way to rehearsal. And it's super easy to make! I made a few changes to my version, but this is what you'll need below.
Ingredients

• 8 ripe bananas
• 1 cup coconut oil
• 8 eggs
• 2 tsp vanilla extract
• 3 tsp cinnamon
• 1 cup coconut flour
• 1/2 tsp sea salt
• 2 handfuls walnut pieces
• 2 handfuls golden raisins

Preheat the oven to 350F.

Mash all of the bananas in a big mixing bowl.

Add the rest of the wet ingredients in the bowl. Be sure to beat the eggs and melt the coconut oil before adding them in. Mix well.

Add in the coconut flour, salt and cinnamon. Mix well.

Lastly, fold in the walnuts and raisins.

Grease 2 pans with coconut oil and pour the mixture in.

Bake for 45-60 min until the center is set.
